Simple ‘shower’ soup costs 12.6p pp.

I love this soup, so do the kids, its simple and cheap to make and can be made in – between alllllllllllll those showers we are having at the moment.

Costs 38P in total to make, that’s 12.6P PER BOWL!!!!

INGREDIENTS

  • 2 MEDIUM POTAOTOES PEELED AND CHOPPED = 5P
  • 1 RED ONION = 4P
  • 2 CARROTTS =5P
  • 1 CLOVE OF GARLIC = 3P
  • CHOPPED PASLEY – A HANDFUL – FREE GARDEN
  • 1 STOCK CUBE =2P
  • BOILING WATER TO THICKEN = 2 PINTS
  • 2 TABLESPOONS OF FLOUR = 2PUEET
  • 1 MINI BAGUETTE, BAKED AND SLICED = 12P
  • 1 QUIRT OF OLIVE OIL = 3P

              METHOD

  1. Peel and chop the onion, the carrots, potatoes and garlic into even chunks (the garlic slices)
  2. Pop a medium sized pan onto heat, add the onion and ‘saute’ – cook until softened – not burnt!
  3. When the onions have softened add the garlic, cook for two further minutes.
  4. Make up the stock with the cube and boiling water
  5. Add the flour and with a non stick spatula, mix the contents of the pan together for a few minutes then add the stock to this.
  6. Add the remaining vegetables and stock – bring to the boil.
  7. Then lower heat and cover stirring from time to time to ensure it is not sticking to the bottom.
  8. Meanwhile with the small oven baked baguette rolls/bread, slice them into small pieces and pop back in the oven/grill for a few minutes until golden brown, this makes them like croutons.
  9. In 10 – 15 minutes time,  the soup mix  should be ready.
  10. Add the parsley and serve in bowls with the bread – super yum, super cheap, super easy – enjoy
