Quick anchovy and feta toasts for 40p
So simple and quick is this feasty little number costing only 40p – a winner to satisfy all appetites and a nice alternative to pizza
serve it with a green salad – yum
INGREDIENTS
1 slice of chunky wholemeal bread = 10p
4 anchovy fillets = 17p
1 pinch of oregano herbs = 1p
1 tablespoon of tomatoe puree = 3p
4-6 cubes or chunks of feta cheese =9p
METHOD

Heat the grill.
- If you haven’t done so already, cut a chunky slice from your hopefully ‘homemade’ loaf – wholemeal I love best.
- Spread the puree all over it, sprinkle half the herbs on the puree.
- Lay the anchovy fillets on top of the puree.
- Pop on the feta cheese ( I used this as it was what I had in the fridge).
- Sprinkle with the remaining herbs.
- Grill until sides of toast start to turn brown – mine went a bit OTT on the right hand side.
- Serve on its own or with a salad.
- Made in minutes, savoured for longer – great with friends, who just ‘pop’ in – enjoy.
- There is no point 10, its that quick and easy.
